The goal of the game is to color all the shapes to not have 2 of the same color touching. They are only technically touching if there edges meat up, The corners dont really matter. If theres anything thats literally impossible to do on easy, Let me know and i will redesign that part to be possible, Even if its a tiny change.

Currently fixing little mistakes i somehow didnt notice. I recommend you start from the circle

Now its most definitly possible on hard, You can tell if your on a possible map or not by if the circle has a circle cake. Also, Start from the circle and as quickly as possible branch to the huge hexagons.
